Recipes for Diabetics – Tomato and Barley Soup

Tomato and Barley Soup

Barley has a low GI very effective in binding cholesterol as well as lowering blood glucose readings of Diabetics. This soup is also Ideal for Slimmer’s.

1            Large Onion ( Chopped)

2           Cloves Garlic (Crushed) or 1-2 minced garlic

1ml     Canola or Olive oil

6ml      Curry Powder

1.5L     Boiling Water

2          Chicken Stock Cubes dissolve in  (above 1.5L boiling water)

125ml   Pearl Barley

250ml   Split Lentils

1                   410g tin tomatoes with juice

Freshly ground black pepper

soup Bowl

Method

Heat oil, add onion and garlic stir until brown ,add curry powder.

Stir water, stock, barley ,lentils and tomatoes add pepper to taste.

Boil and simmer for 1 hour or until barley and lentils are tender.  Add

fresh parsley.
